Billington’s – an award-winning producer of the finest quality natural unrefined sugars – has just introduced two distinct single-origin Maple syrups to UK’s supermarket shelves: Amber, which carries “smooth, buttery caramel notes”, and Very Dark, which holds a flavour that is “bold, yet sophisticated, with more intense caramel overtones”.

The manufacturer says that Amber makes the perfect pantry staple, ideal for pouring over pancakes and ice cream, whilst Very Dark has been created to suit both sweet and savoury cooking, to inspire the bold and creative foodie. 

 

Favoured by the ‘flavour alchemist’

 

Paul A. Young, the revered Chocolatier and ‘flavour alchemist’, has already declared himself a fan of the new products: “I've always loved Maple syrup and used it in my chocolates for years,” he revealed, adding that it can be difficult to find pure syrup that has not been diluted or flavoured in some way.

 

“As a purist, Billington's Maple syrup stands out, with its clean delicately sweet flavour with the traditional maple characteristic aftertaste you expect and love. The light syrup is bright, delicate and not overly sweet, whilst the dark syrup is luxurious, rich and intense.”

 

Sweet single-origin stories

 

These single-origin Maple syrups are harvested and produced by two small holding farms in the Canadian region of Quebec. ‘Amber’ is produced by Coulée Franche, the maple farm situated in Dunham and ran by a husband and wife team approximately 10 miles from the US border, whilst ‘Very Dark’ comes from Pépin & Roy, owned by a family who grew up in the Maple industry and passed down their passion through several generations. 

 

Each bottle of syrup in the range is from a single farm populated with Maple trees that are cared for in a nurturing environment that encourages natural growth and supports wildlife.
