Leading brewery plant developer Ziemann Holvrieka recently debuted its OMNIUM brewing process technology in the new brewhouse of Schlossbrauerei Reckendorf, achieving significant efficiency and quality gains for the mid-sized German brewing outfit.

 

With its innovative OMNIUM brewing process technology, Ziemann Holvrieka combines century-old brewmaster knowledge with state-of-the-art high-tech equipment. The result, as shown in the technology’s first real-world case study, is a brewing process designed with the highest degrees of freedom. 

 

Adopting the OMNIUM technology makes it simple to select the type and time of hop addition, the grist composition, first wort concentration or boiled wort volume. In addition, the process allows for shorter process times and high raw material yields. 

 

Significant gains for Schlossbrauerei Reckendorf

 

OMNIUM by Ziemann was implemented for the first time in 2018 in a new brewhouse located in southern Germany. 

 

The medium-sized Schlossbrauerei Reckendorf in the Franconia region was the entity to take on this pioneering role – and certainly, the first practical application of OMNIUM has already borne impressive results for the new brewery project. 

 

Such benefits include 34 per cent shorter brewing times, 50 per cent less tanning agents, 13 per cent higher hop yield, over one per cent higher malt yield and 30 per cent faster fermentation.

 

A 120,000hl brewing line on just 69m2

 

Beyond such impressive technological results, the OMNIUM system also offers advantages in terms of the building construction. Impressively, the OMNIUM brewhouse in Reckendorf boasts a brewing line with an annual capacity of 120,000hl, yet it was built on a net area of just 69 square metres. For the Schlossbrauerei, this was a further positive point in favour of OMNIUM – indeed, it was the only way to install the brewhouse in the very compact new building in Reckendorf.
